Soup is definitely food for the soul because it’s warm, packed with rich flavour and feels like a hug in a bowl. Seafood and capsicum or bell peppers are always a great combination and we made a soup out of them. Our roasted capsicum and prawn soup is a great family recipe and is easy to make for them too. It’s packed with rich tomato flavours with the sweetness of red peppers and seafood goodness from the prawns.
Making your roasted capsicum and prawn soup
Roasting the sweet red capsicum and tomatoes gives them a deeper roasted flavour which is always delicious especially if you blend them. Prawns don’t take long to cook and you can choose to keep the shells on or take them off. If you get fresh prawns, remember to remove the digestive tract with a knife. The combination of rich tomatoes, sweet peppers and prawns are a great combination and the addition of coconut cream adds more depth.
If you want to, add a chili or chili flakes for some heat.
